Slimming World chocolate cake recipe is 'gorgeously gooey' – takes 10 minutes in oven


With cosy evenings in full flow, there’s nothing like indulging in a warm chocolate cake with a cuppa to end your day with. But more often than not when you’re trying to stay fit, you might feel guilty.

Slimming World has an easy and delicious chocolate cake recipe that is not only quick, it also helps you to “lose weight”.

Described as ‘gorgeously gooey’ the slice is fluffy, rich and chocolatey and it ensures you don’t miss out on your favourite dessert.

It’s also vegetarian, and this recipe serves eight people.

Ingredients:

– Five medium eggs, separated
– 50g caster sugar
– One tsp vanilla extract
– 60g self-raising flour
– 30g cocoa powder
– ½ tsp baking powder
– 25g milk chocolate

Method:

First you need to preheat your oven to 190°C (fan 170°C/gas mark 5).Then line a 20cm x 20cm baking tin with some baking paper. After this you can place a large heatproof bowl over a pan of boiling water (making sure the bowl doesn’t touch the water), then turn off the heat.

In this bowl, add the egg whites and sugar and beat until stiff peaks form.

Following this, add the egg yolks and vanilla extract into the bowl, whisking for 2-3 minutes until the mixture becomes thick and glossy. Remove the bowl from the heat, sift in the flour, cocoa powder, and baking powder, then gently fold in using a metal spoon.

Pour the batter into the prepared tin, giving it a slight shake to level it. After this, bake for 10-12 minutes, or until the sponge is risen and set. Allow it to cool slightly.

Meanwhile, melt the chocolate in a heatproof bowl set over a pan of gently simmering water (again, ensuring the bowl doesn’t touch the water), stirring occasionally.

Drizzle the melted chocolate evenly over the sponge and let it cool slightly. While it cools, prepare the Slimming World custard. Cut the sponge into 8 equal portions and serve with the hot custard.
