As the weather turns chilly and seasonal bugs start to circulate, a hearty, warming dish could be just what you need. This comforting meal is not only affordable and simple to prepare, but according to one fan, “it’s like medicine for my stomach”.
A member of a Facebook Group dedicated to Gordon Ramsay shared the recipe for this soothing dish, stating: “I eat this soup night and day – healthy!” The straightforward vegetable soup requires just a few ingredients and has been featured on the Awesomefood blog.
It has a very high vegetable content, and includes frsh herbs and turmeric, a spice with health benefits. It is also made from entirely natural ingredients, other than the stock cube to make the broth (if in fact you use a stock cube, as it is of course possible to make broth from scratch).
Ingredients:
- 1 large carrot, chopped
- 1 zucchini, chopped
Method:
Prepare the vegetables: begin by peeling and dicing the carrot, zucchini, potatoes, and onion.
Saute the onion and garlic: in a large pot, heat some olive oil over medium heat. Add the onion and garlic, cooking for 2-3 minutes until they soften.
Add the other vegetables: Add in the chopped carrot, zucchini, and potatoes. Stir well and let them cook for a few minutes.
Add the broth: Pour in the vegetable broth or water, then season with salt, pepper, and turmeric if desired. Bring the pot to a boil.
Simmer the soup: Reduce the heat and allow the soup to simmer for 20-25 minutes, or until the vegetables are fully tender.
Complete with fresh herbs: Mix in fresh parsley, tweaking the seasonings if required. Add extra herbs for garnish if desired.
Relish and savour: Serve your hot vegetable soup, accompanied by crusty bread or savoured solo.
