Nigella Lawson's omelette is the 'world's best' and includes just six ingredients – recipe


If you’re in a hurry and need a quick lunch or dinner, an omelette is a great option.

Omelettes usually consist of eggs whipped up with cream, milk or butter and fried in a small amount of butter or oil in a frying pan.

Often, omelettes are made with various flavours including mushrooms, bacon, cheese and vegetables.

If you’re looking to try a new omelette recipe, Nigella Lawson promises her Corsican omelette is the “world’s best omelette”.

The recipe, which was originally featured in Nigella Summer, includes goat’s cheese, fresh mint, salt and pepper.

Nigella said of the recipe: “This has to be the world’s best omelette.

“I call it Corsican not because it stems from any in-depth research into, or indeed intimate knowledge of, the food of Corsica but because it is the adaptation, from memory, of the best thing I ate there on a holiday many years ago.”

How to make Nigella’s Corsican omelette

Ingredients:

  • Three large eggs
  • Maldon sea salt flakes
  • pepper
  • 15 grams butter
  • leaves from 4 good-sized sprigs fresh mint (shredded)
  • approx. 100 grams thick slice of a chevre log

Method:

1. Firstly, beat your eggs and season them with salt and pepper. Melt the butter in a drying pan that is approximately 25cm in diameter.

2. Once the butter has melted, chuck in most of the shredded mint, saving some for later on. When it has sizzled in the butter and has turned bright green, pour in the eggs and tip the egg around the pan.

3. Next crumble over the cheese and cook, ensuring to occasionally life the sides and swirl the pan around so any leftover egg can cook underneath.

4. Once the top of the omelette looks nearly set but still slightly gooey, fold in two sides. Slide it onto a plate and sprinkle it with the rest of the mint.

Serve the omelette with a crisp green salad and tomatoes.

One fan who had previously made the recipe described it as “delicious”. They commented: “I made this a few minutes ago for breakfast and it is delicious!

“I love the taste of the cheese and the mint in the omelette… absolutely a good way to start your day.”
