Mary Berry’s banana loaf recipe

Ingredients

100g butter, softened

175g caster sugar

Two eggs

Two ripe bananas, mashed

225g self-raising flour

One tsp baking powder

Two tbsp milk

Method

You will need a 900g loaf tin with base dimensions of 17 x 9 x 9cm (6½ x 3½ x 3½in).

Lightly grease the loaf tin and line it with non-stick baking paper. Preheat the oven to 180°C/350°F/Gas Mark 4.

Place all the ingredients into a mixing bowl and beat for around two minutes, or until thoroughly combined. Using an electric mixer is ideal, but you can also mix by hand with a wooden spoon if preferred.

Transfer the batter into the prepared tin and smooth the top. Bake for approximately one hour, or until the cake is golden brown and has risen well. To check if it’s done, insert a fine skewer into the centre – it should come out clean.

Allow the cake to cool in the tin for a few minutes, then loosen the edges with a small palette knife and turn the cake out. Peel off the baking paper and place the cake on a wire rack to cool completely. Slice generously to serve.
