Make delicious healthy pancakes with just two ingredients people are 'obsessed' with


When you wake up in the morning craving something sweet and satisfying, nothing hits the spot quite like a plate of pancakes.

Versatile, easy and delicious, there are so many different ways to make this quick breakfast, with a huge variety of different toppings available too.

However, if you want to make the job even easier for yourself – with minimal washing up too – then you’ll want to know about one recipe that uses just two key ingredients to make a batch.

The creation was shared by Ambar Driscoll on TikTok, an influencer with more than 297k followers, who says she’s been making them for over 10 years and they’re still her ‘favourite’.

She said: “You know how you have those recipes that you just stick with because they’re so easy?”

She continued: “Seasons of life have moved on, but one thing has stayed constant, and that is that I make these pancakes.”

Ambar mentioned that she had made these for her partner early in their relationship and that he was immediately ‘obsessed’ with them.

And they’re so simple to make with just two key ingredients – bananas and eggs.

Taking two bananas, Ambar peeled them and mashed them up with a fork inside the peel to save on washing up. She then added them to a bowl, using the fork again to mash them up a little bit more.

Then, all you need to do is crack one egg into the bowl as well and give it a good mix until everything is combined.

Ambar then grabbed a pan and placed it over a medium heat, adding a knob of butter to help the pancakes crisp up – but you could also use oil too.

Once the butter has melted, ladle three spoonfuls of the pancake mix into the pan, making sure they’re spread out enough that they won’t stick together.

When they begin to sizzle and bubble, which should be after a couple of minutes, flip them over and allow them to cook on the other side for the same amount of time.

Then, it’s time to serve, topping with whatever you have to hand. Ambar used chocolate spread, raspberries, strawberries and Greek yoghurt, but lemon and sugar, honey or other berries would also work just as well.

And in the comments, people agreed that the easy pancakes looked delicious, with many saying how keen they were to try them out at home.

And a third suggested: “Ooo I make these too! If you add a little sprinkle of baking powder they rise a little more.”
