Jamie Oliver's tomato soup recipe is 'easy' version of 'simple classic' – takes 20 minutes


With autumn weather creeping in and the leaves turning brown, soup season has officially arrived.

There’s nothing better than a bowl of comforting soup, and Jamie Oliver’s take on tomato soup is an “easy” version of the “simple classic”.

With just a few fresh ingredients, the chef says that “making your own tasty tomato soup is so easy.”

He added: “Give it your own twist by adding some of your favourite herbs and spices; try making it thick or thin, chunky or smooth – the possibilities are endless. It’s also great to use as a quick base sauce for dishes such as cannelloni or lasagne.”

What’s more, this healthy soup recipe, which serves six people, is only 122 calories per portion. Taking only 20 minutes to cook, here’s how to make Jamie Oliver’s simple tomato soup.

Method

Roughly slice carrots and celery, and chop up the onions. In a large pan, heat two tablespoons of oil over medium heat and add the prepped veg.

Keep the lid ajar, and cook for 10 to 15 minutes until vegetables are softened.

Using a jug, crumble stock cubes before pouring n 1.5litres of boiling water. Add stock to pan with tomatoes – both tinned and fresh.

Bring to the boil and reduce to a simmer for 10 minutes with lid on. Remove from heat and season with salt and pepper before stirring through basil leaves.

Using a stick blender to liquidise the soup until smooth. Serve and enjoy your delicious tomato soup.
