One of the dishes from his One cookbook is the perfect example that preparing a nutritious meal doesn’t necessarily mean spending hours cooking.
The star chef’s one-pot smoked salmon pasta recipe serves one and takes just eight minutes from start to finish.
Perfect for busy weeknights or when you want to impress guests, this simple dish is both nourishing and satisfying using only a handful of ingredients.
Plus, it’s easy to customise with your favourite veggies or spices, for extra flavour and goodness.
Ingredients
125g fresh lasagne sheets
Two spring onions
80g spinach
60g smoked salmon (two slices)
Half a lemon
Five grams Parmesan cheese
olive oil
One tablespoon cottage cheese
extra virgin olive oil, optional
Method
Start by boiling a kettle. Next, take your lasagne sheets and cut them in half lengthwise, then slice them into two cm strips with a crinkle-cut knife if you have one.
Prepare the spring onions by trimming them, then finely chop them alongside the spinach and half of the salmon. Grate the zest of a lemon and the Parmesan cheese separately.
Heat a 28cm frying pan over high heat, adding a drizzle of olive oil once it’s hot.
Toss in the spring onions, spinach, chopped salmon, and lemon zest, allowing them to sauté briefly.
Scatter the pasta strips into the pan, then carefully pour in enough boiling water to just cover the pasta—about 250ml.
Let the mixture simmer for four minutes, stirring regularly, until the pasta absorbs most of the water and a lovely sauce forms, adding more water if necessary.
Once done, turn off the heat and squeeze in the lemon juice. Stir in the cottage cheese and Parmesan, adjusting the seasoning to your taste.
Finally, delicately tear over the remaining salmon and finish with a drizzle of extra virgin olive oil, if desired.
