Jamie Oliver’s coffee cake recipe takes 10 minutes to make before it bakes in the oven


Nothing beats the taste of a cup of tea to warm you up in the cold weather, but one thing that may be even better is a buttery sweet treat to go with your toasty beverage.

Coffee cake is one of the most popular homemade cake recipes due to its rich unique flavour but it is also incredibly easy to bake.

Jamie Oliver’s “best” coffee and walnut cake is so easy that a child could help bake it as it only takes roughly 10 to 15 minutes to prepare the mixture before it goes in the oven for 20 to 25 minutes.

On his website, Jamie said: “This cake is a favourite afternoon pick-me-up, but you can use decaf coffee if you are baking for children or anyone sensitive to caffeine.”

This is the perfect recipe to impress loved ones or to make for yourself on a free afternoon as a delicious dessert to have on a frosty autumn evening.

Method 

Preheat the oven to 180C or Gas Mark 4, then grease two cake tins with butter and line with baking paper.

Place two-thirds of the walnuts in a food processor and blitz them into a fine powder. Then cube up the butter, place it in a bowl with sugar and cream it until you have a light and fluffy mixture.

Gradually beat the eggs into the mixture and gently mix in the powdered walnuts.

Fold in the flour, baking powder and a pinch of salt into the mixture and stir until everything is incorporated.

Roughly chop up the remaining walnuts and stir into the mixture, then pour in the cold espresso.

Divide the cake mixture between the cake tins, and then bake in the oven for 20 to 25 minutes, or until it is a light golden brown colour.

Once the cakes are ready take them out of the oven and allow them to cool in the tins for five minutes, then transfer them to a wire rack to cool completely.

To make the filling, add the butter to a bowl sift in the icing sugar and beat until fluffy, then add in the coffee.

To make the icing, sift the icing sugar into a bowl and stir in the coffee until you have a thick smooth mixture.

Decorate the cake and then scatter any remaining walnuts you have on top, and your tasty coffee cake is ready to serve.
