Pancakes are popular around the world and have become a breakfast staple served with a plethora of different toppings.
Most people make their pancakes using flour, eggs, butter and sugar, however, with more people taking an interest in weight loss and keeping fit, low-calorie recipes have emerged.
Many low-calorie pancake recipes include protein powder, bananas and sweeteners which can end up tasting dry with an overpowering flavour of banana.
If you’re looking to try out a new pancake recipe but don’t want to spend hours cooking, then you must try these super simple cottage cheese pancakes.
Cottage cheese is a curdled milk product that has gone viral in recent months thanks to its high protein and calcium content.
The creamy, mild cheese is associated with weight loss but, if used correctly, it can elevate meals adding a creamy, moist texture.
These low-fat, high-protein pancakes are made with three simple ingredients you will likely have in your cupboard.
To make these pancakes, you will need a nonstick pan, a flat spatula and a blender.
I topped my pancakes with maple syrup but you can choose any topic you like. Jam, sliced berries and yoghurt work well.
How to make cottage cheese pancakes
Ingredients
Half cup old-fashioned oats
Half cup cottage cheese
Two large eggs
Salt to season
Method
1. Put all of the ingredients in a blender, allowing them to process for around 30 seconds.
2. Next, heat the oiled frying pan over medium heat. Once hot, add the batter two tablespoons at a time, making sure there’s plenty of space between each one.
3. Cook the pancake until the edges start to set and the centre begins to bubble. Flip after a couple of minutes and cook the other side for another one to two minutes before transferring to a plate.
4. Cook the remaining batter using the same technique. Serve the pancakes warm with your choice of topping.
