Creamy bacon pasta recipe that’s ‘packed with heaps of flavour’ cooks in only 10 minutes


Households looking for a recipe they can cook “quickly” that everyone will love should look no further than Sarah Rossi creamy bacon pasta.

Pasta is one of those go-to dishes that don’t require many ingredients but still give you a tasty meal.

Taking to her food blog Taming Twins, Sarah described this dish as “packed with heaps of flavour, hearty, satisfying and on your plate in 10 minutes”.

When creating this recipe, Sarah centred the dish around being speedy, delicious and simple.

As well as those three things, the ingredients included in the recipe are relatively inexpensive.

Ingredients 

300g pasta

One onion, peeled and finely chopped

Two garlic cloves

240g streaky smoked bacon, chopped into 1cm strips

170g sun-dried tomatoes, drained and chopped into thin strips

Four tablespoons tomato puree

200g peas

200g cream cheese

Salt and pepper

Method 

Start by cooking your pasta according to the instructions on the pack, in a pan of well-salted water. Sarah says that spaghetti “works perfectly” for this dish, but you can use whichever pasta you like.

While that’s cooking, put your onions, garlic, tomatoes and bacon into a pan and fry over medium heat for five to 10 minutes until the onions are softened and the bacon is cooked through (you shouldn’t need any oil as the bacon will release some).

Five minutes before your pasta has finished cooking, add the peas to the pasta pan and continue cooking as normal.

When the bacon and onions are cooked, reduce the heat to low and add the tomato puree and cream cheese.

Give everything a good stir and cook for two to three minutes until just heated through.

When the pasta and peas are cooked, drain (reserve a cup of the cooking water) and add the pasta and peas into the pan with the bacon and vegetables.

Reserve a little pasta cooking water so you can help the sauce to loosen up when stirring the dish together as it will give a nice silky smooth finish to the pasta.

Add black pepper and a splash of reserved cooking water if you’d like a more runny sauce.

Give everything a good stir and serve immediately – this shouldn’t need any more salt as the bacon is salted, but taste it to be sure.
