Comforting spicy Thai chicken ramen bowl recipe will keep you warm this autumn

Just recently, people who are feeling under the weather can tuck into this ‘immunity soup’ recipe as the threat of a tripledemic looms read more about it.

Now TikTok culinary sensation @onlyscrans has made this dream a reality by sharing his “comfort and cuddle in a bowl” spicy Thai chicken ramen recipe, elevating the humble soup experience to extraordinary new heights.

He pointed out “it’s that time of year where everyone is getting ill”, highlighting the need for a dish that not only warms the soul but also fortifies the body against seasonal ailments.

What’s truly remarkable about this recipe is its simplicity: “There’s only 20 minutes of cooking time.” Perfect for those who’ve had a draining day and crave relaxation without the hassle, this scrumptious meal is just moments away.

To make this tasty recipe, you will need:

  • 1 clove garlic
  • 1 inch ginger knob
  • 1 red chilli
  • 3 spring onions
  • Coriander
  • Noodles
  • Thai red curry paste
  • 2 tbsp veg oil
  • 1 tin coconut milk
  • 1 chicken breast
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 300ml Water
  • Pak Choi
  • Chilli oil

He joked in his caption: “When I say this bowl of food will change your life, please do not think for one minute that I’m exaggerating. I’m passing this recipe down as a service to mankind.”

So, now that you’re salivating, we bet you’re wondering how to put those ingredients to good use.

First, you’ll want to “chop up the clove of garlic, ginger and a chilli, as well as some spring onion and coriander for garnish later on”.

Poach the chicken “so it pulls apart”. If you’ve never poached it before, the foodie said it’s “very simple” saying to put it in “boiling water for 15-20 minutes until cooked”.

He then said to fry the “aromatics in a bit of oil until they start to go soft,” and then add the pot of Thai curry paste, stirring “until it’s saucy before adding 300ml of water”.

“Pour in a can of coconut milk and stir until all the lumps have gone and it’s silky smooth,” he shared, saying it’s time to add “a splash of soy sauce and a dash of fish sauce”. Now finally, it’s time for the noodles.

He added “healthy leafy greens” but also a pak choi, but saying if you can’t find one of these, or don’t like it, you could add spinach as an alternative.

The foodie joked you should “pull the chicken until it’s more shredded than the blokes around the Love Island swimming pool” then “add it to the pot”. And now it’s ready to be served.

He joked: “Get it all in a bowl and grab your garnish from earlier. Some coriander, spring onions, chilli and chilli oil too if you’re a hard man. A big squeeze of lime and you are DONE.”

The video racked up 67,000 likes and 200 comments from foodies. One said: “This looks so good, I just wish I liked coconut.” Meanwhile a second added: “I just made this and don’t like coconut or ginger… It’s unreal.”
