A good homemade pie is hard to beat but many can be costly when calling for fresh ingredients like chicken, leek or steak.
This classic fish pie recipe is a little different, using frozen ingredients to bulk out the filling and keep costs to a minimum.
It also makes it a reliable recipe that you can make at the last minute, as long as there are a few items lurking in the freezer.

This fish and potato pie promises to be “classic but so simple”, and an “easy” recipe that everyone should have in their repertoire.
Method
A total of 25 minutes is all you need to set aside to make this delicious pie thanks to the simple recipe. Start by heating the milk in a medium-sized saucepan over medium heat.
Add the fish and cook with the lid on for seven minutes until steaming, then cover and turn off the heat and leave for five minutes. Remove the fish with a slotted spoon and place in an ovenproof dish approx. 22×22 cm in size.
Put the potatoes into a pan of salted cold water with lid on and bring to a boil, then cook them for another 10 to 12 minutes until really tender.
Drain the potatoes well and allow them to steam dry for a few minutes before adding 150ml of the fish milk and mashing well.
Next, add 250ml cold water to the saucepan of remaining milk, then off the heat, and tip in the flour. Over a medium heat, whisking vigorously and constantly, bring everything gradually to a simmer.
Continue whisking and cooking until the sauce has thickened, two to four minutes. Now crumble in the stock cube, add the vegetables and cook for two minutes more.
Preheat the grill to high then pour the sauce over the fish and then top with the mash. For an extra layer of flavour, try adding some grated cheddar cheese to the mashed potato.
Grill for eight to 10 minutes until golden. Plate the pie up and serve with a side of extra vegetables and lemon wedges for freshness.
