Sweet potatoes offer many nutritional benefits but are not necessarily healthier than regular potatoes.
They have a much sweeter taste and softer texture, so they’re well suited to stronger flavour pairings like cottage cheese, sour cream, and fresh green herbs.
The baking abilities of sweet potatoes are a little different to those of white potato varieties, and they’re much faster to cook – especially in the air fryer.
Home cook Jessica, founder of the online blog Jessica in the Kitchen, has shared the speediest recipe for crispy baked sweet potatoes that she claims are “super sweet, tender and perfect for topping with all your favourite baked potato fixings”.
Jessica says the spuds take “half the time” of regular baked potatoes, and they’re ready in just 30 minutes.
There’s no need for fancy cooking equipment or a long list of ingredients either. Potatoes with crispy skin and fluffy core are easy to master with just two cupboard staples: sea salt and oil.
As for cooking utensils, gather a pastry brush and a fork, plus your air fryer, of course.
Air fryer baked sweet potatoes recipe
- Two sweet potatoes
- 1-3 tsp oil
- A generous sprinkling of sea salt flakes
Method
First, wash, clean, and pat dry your sweet potatoes for the crispest results. Pierce the potatoes several times with a fork to allow steam to escape, then place them in a bowl.
Rub the oil all over your sweet potatoes using your hands or a silicone brush, followed by a generous sprinkle of salt.
Transfer the seasoned potatoes to the air fryer basket and cook them at 200C for 30 to 35 minutes. Carefully remove the cooked spuds from the air fryer basket and slice them open in the centre.
Using your fork, fluff the inside a little bit. Add a pat of batter if you’d like then serve them with toppings of your choosing.
