I added a fridge staple to coffee and was delighted by the results – it wasn't milk


Whether you keep butter in the fridge at home or not, it’s a staple ingredient nonetheless. However, one thing I had never used it for was to make coffee.

I am less of a fan of sweet, milky coffees and instead prefer something strong and punchy – a black Americano. As someone who is also partial to a strong Espresso, ditching milk in my morning ‘cup of joe’ has never been an issue.

But some days coffee needs an extra kick of flavour, especially when it’s early in the morning, and a new trend, likened to the Bulletproof Coffee recipe that circulated in 2009, promises to deliver just that.

Originating from the mind of Dave Asprey, the ‘Bulletproof’ concoction combines high-quality coffee with grass-fed butter and medium-chain triglyceride (MCT) oil.

The result is a creamy, energy-boosting beverage that promises sustained mental clarity and physical endurance.

Intrigued by its cult following, I decided to try the renowned recipe, albeit with a slight twist. Armed with a freshly brewed cup of black coffee – I love the Nescafe Azera Americano Instant Coffee – and a cube of salted butter, I set out to explore this intriguing blend.

The process was simple yet fascinating. I began by boiling water and preparing my black coffee as usual. Once the coffee was ready, I added the cube of salted butter, stirring it in until it melted completely.

What I discovered was pleasantly surprising. The coffee took on a silky, smooth texture, with a velvety finish that was neither watery nor overly bitter. As I took my first sip, I was impressed by the richness of the flavour.

The butter added a subtle creaminess that perfectly balanced the natural bitterness of the coffee. The velvety finish lingered on my palate and left a pleasant aftertaste too.

For those who shy away from milk but aren’t quite ready to embrace the starkness of black coffee, this recipe is a revelation.

It’s a small adjustment that makes a big difference, transforming an already popular beverage into something even more enjoyable.

Reflecting on my experience, I can confidently say that this buttered coffee is a recipe I will use again. It offers a delightful alternative to both black coffee and milk-based drinks, providing a rich, creamy texture without the need for milk.

It’s not just butter that you can stir into coffee either. According to Dave Cutler, Head of Training at Lavazza, ghee can also be used for similar results.

He said: “For a flavour upgrade, swap regular butter for ghee. This clarified butter boasts a uniquely nutty and rich taste that adds depth and complexity to your coffee. It’s also often easier to digest for those with lactose sensitivities.”
