Mary Berry's parmesan and parsley-crusted salmon is an easy-to-make crowd-pleaser


Mary Berry has a simple yet show stopping recipe that will look good on any dinner table and leave your guests impressed.

The Great British Bake Off star shared the recipe for her baked salmon with parmesan and parsley crust in her New Age Cookbook.

This recipe marries the goodness and distinctive flavour of the salmon with the richness of the parmesan and fresh finish of the parsley.

The best thing about this dish is that it is easy and quick to make, taking as little as twenty minutes from start to finish.

As it’s such a well-rounded dish, the side options are countless, ranging from a simple steamed rice to some creamy dauphinoise potatoes.

Ingredients

Six 150g/5oz salmon fillets, skinned

salt and freshly ground black pepper

150g/6oz cream cheese

small clove garlic, crushed

½ lemon, grated rind only

25g/1oz fresh white breadcrumbs

25g/1oz fresh, coarsely grated parmesan

Two tbsp chopped fresh parsley, plus extra to garnish paprika

Instructions

Preheat the oven to 200°C (400°F) or Gas Mark 6.

Season both sides of the salmon fillets and arrange them on a greased baking sheet or roasting pan.

In a bowl, mix the cream cheese with garlic, salt, pepper, and lemon zest. Divide this mixture into six portions and spread it evenly over each fillet. In another small bowl, combine the breadcrumbs, Parmesan, and parsley, seasoning to taste. Sprinkle this mixture on top of the cream cheese layer, then lightly dust with paprika.

Bake in the oven for approximately 15 minutes. The salmon is ready when it shifts from translucent to a solid, opaque pink.

Serve right away, decorated with chopped parsley.
